Egg in a (Acorn Squash) Hole

This is my version of the famous egg in a hole. You have to slice the Acorn squash quite thin so it cooks evenly and also the egg fits in it nicely. I make it often and it is always in a success at the house. I love the healthy fiber in all squash so I try to incorporate in our daily life. . Egg whites work very well too if you are watching your cholesterol.

Red chili flakes to taste
Sprigs of Thyme or Savory
4 eggs
Sriracha (optional)

2 tbsp. of olive oil (or olive oil spray)
1 Acorn squash
garlic and herb to taste
salt and pepper to taste

1.     Preheat oven to 400 degrees. Cover a baking sheet with tin foil and coat with olive oil.  Slice the acorn squash approximately 1 inch thick.

2.    Place 4 slices on the baking sheet. Lightly brush or spray each slice with olive oil and sprinkle on the garlic herbs, salt and pepper, chili flakes and herbs. Bake for 20 minutes.

3.     Remove from the oven. Crack an egg in the hole of each slice and sprinkle with salt and pepper to taste. Bake an additional 5 minutes for an over-easy egg.

4.     Serve on a plate garnished with a sprig of fresh Thyme or Savory and a drizzle of Sriracha (optional).
