I like the way this gorgeous salad presents in a plate. You can use (instead of peaches) any fruit that are in season. Mango or papaya would be great! Anything bright and healthy works. Its also amazing without any fruits.
Serves: about 4
2 romaines salads, washed
3 peaches
2 radishes (optional)
about 1/2 cup egg white (4 egg white)
1 cup toasted pine nuts
Or 1 tbsp sesame seeds to sprinkle on the peaches. (optional its for deco)
Dressing: (From my cookbook, “Happy Healthy Holidays”)
1 clove of garlic (minced or crushed)
1 egg yolk
1tbsp dijon mustard
1 anchovy fillet
1/4 cup lemon juice
1/2 cup parmesan cheese
1/3 cup to 1/2 cup olive oil
salt and pepper
1 small shallots chopped finely
chives
Start with the egg whites so they have time to cool off. I pour mine in a sprayed with olive oil bowl, and cook them in the microwave for 2 minutes. Mix and cook them for another 2 minutes.
Slice the peaches, and cook them in a hot skillet (I salute them with olive oil) under high heat to start with, then turn to medium heat. I cook them for about 2 to 3 minutes on each side. Sprinkle the Sesame seeds if you wish. Reserve.
Slice the radishes.
Mix every ingredients of the dressing in the mini Cuisinart until smooth. Add the chopped Chives at the end.
Cut the Romaine in half (Length)
Present the Romaine in your large dish. Sprinkle with the egg whites. Then the pine nuts, if you are using them. Pour the dressing and then decorate with he grilled peaches.
